Mexican Corn Salad (Street Corn)

INGREDIENTS
4 cups frozen corn (thawed)
1 tbsp salted butter
1⁄4 tsp ground cumin
¼ tsp chipotle chili powder
¼ tsp black pepper
¼ tsp salt
½ red onion (diced)
⅓ bunch cilantro (chopped)
½ cup Cotija Cheese (crumbled)
1 lime (juiced)
⅓-½ cup Mexican Crema (recipe below)
1 jalapeno (seeded and diced *optional)
½ cup mayonnaise
½ cup heavy cream
1 tablespoon lime juice
¼ tsp chipotle chili powder
⅛ tsp salt
