INGREDIENTS
Serves 4
For the corn tortillas
300g masa harina
350ml water
½ tsp salt
For the chilli
1 onion
1 tbsp olive oil
300g mushrooms
2 green peppers
2 tsp ground cumin
1 tbsp sweet paprika
1 tbsp ground coriander
1 x 200g tin sweetcorn
1 x 400g tin kidney beans
1 x 400g tin chopped tomatoes
2 tbsp smoked Tabasco (optional)
Salt and black pepper
For the guacamole
1 large soft avocado
1 large tomato
½ small onion
1 garlic clove
A squeeze of lemon juice
