2 carrots, chopped

2 onions, chopped

1 head garlic cloves, whole

2 bay leaves

4 cups water

1 teaspoon salt

1 19 ounce can diced tomatoes
•
1 pint halved cherry tomatoes
•
1 19 ounce can chickpeas, drained and rinsed
•
1 cup your favourite black olives, pitted
•
2 tablespoons or so of dried oregano
•
1 10 ounce bag baby spinach
•
1/2 454 g box rigatoni pasta, cooked and drained
•
2-4 oz of Grana Padano Parmesan cheese
