* Mushrooms are packed with glutamates, which add meaty flavor without the meat. When chopped into small pieces, we found that they had the same flavor and texture as ground beef.

* * Use a good-quality sandwich bread with a sturdy crumb. Avoid soft, squishy-textured sandwich bread such as Wonder bread.

* * * 90 percent lean ground beef is an obvious way to trim fat and calories, but we found it can have a dry, mealy quality when packed into a meatloaf. To fix this, we use tomato juice and soy sauce to add moisture and prevent the meat from tasting
