INGREDIENTS

1 onion, quartered
2 carrots, cut into approx. 4" pieces
4 stalks celery, cut into approx. 4" pieces
1 turnip, quartered
1 parsnip, cut into approx. 4" pieces
1 whole chicken, about 2 1/2 to 3 lb.
6 c. (48-oz.) homemade chicken broth
4 sprigs fresh dill
4 sprigs fresh flat-leaf parsley
Kosher salt
Freshly ground black pepper
4 eggs
1/2 c. chicken fat, melted
1/2 c. seltzer water
1 c. matzo meal
