INGREDIENTS
For the Dressing:
¼ cup minced red onion
2 Tablespoons vinegar (apple cider vinegar or white)
¼ cup tahini
1 clove garlic
2-3 Tablespoons lemon juice
pinch of sea salt & pepper to taste
For the Salad:
2 bunches of kale (curly or dinosaur/tuscan)
2 teaspoons olive oil
a few pinches of sea salt
¼ cup pumpkin seeds (pepitas)
