2whole rabbit fryers (about 2 pounds each)

1/2 cflour

1 1/2 tspcrushed thyme leaves

1/2 tsponion salt

1/2 tspcelery salt

1/8 tsppepper

1/4 cbacon drippings or shortening

1 cwater
How To Make zajac (braised rabbit), mark's

1Put flour and spices in a plastic bag. Add rabbit pieces and toss to coat well. Heat shortening in skillet. Add rabbit, turning to brown on all sides. Add water, cover and simmer until rabbit is tender. You may also thicken the cooking liquid for a delightful gravy.
