Ingredients For zajac (braised rabbit), mark's

  • 2
    whole rabbit fryers (about 2 pounds each)
  • 1/2 c
    flour
  • 1 1/2 tsp
    crushed thyme leaves
  • 1/2 tsp
    onion salt
  • 1/2 tsp
    celery salt
  • 1/8 tsp
    pepper
  • 1/4 c
    bacon drippings or shortening
  • 1 c
    water

How To Make zajac (braised rabbit), mark's

  • 1
    Put flour and spices in a plastic bag. Add rabbit pieces and toss to coat well. Heat shortening in skillet. Add rabbit, turning to brown on all sides. Add water, cover and simmer until rabbit is tender. You may also thicken the cooking liquid for a delightful gravy.
