    duck breasts

    plums, skins removed
  • 2 Tbsp
    brown sugar
  • 2 Tbsp
    red wine vinegar
  • 1/4 c
    dry red wine
  • 1 c
    beef broth
  • 1
    star anise
  • salt and pepper

How To Make duck breast with plum sauce

    Remove the duck breasts from the fridge and let come to room temperature.

    Meanwhile add the plums, brown sugar, vinegar, red wine and beef broth to a saucepan. Throw in the star anise. Bring to a boil and cook for 10 minutes over med- low heat until the plums are very soft.

    Score the fat on the duck breasts. Season the duck with salt and pepper. Place fat side down in hot cast iron pan and let the fat render and get the skin charred. About 5 minutes. Turn the breasts and cook about 5 more minutes. Set aside on a carving board to rest.

    When the plums are very soft, remove the star anise and use a potato masher to mash the plums to make a thicker sauce. Serve the sauce with the duck.
