2duck breasts

3plums, skins removed

2 Tbspbrown sugar

2 Tbspred wine vinegar

1/4 cdry red wine

1 cbeef broth

1star anise

How To Make duck breast with plum sauce

1Remove the duck breasts from the fridge and let come to room temperature.

2Meanwhile add the plums, brown sugar, vinegar, red wine and beef broth to a saucepan. Throw in the star anise. Bring to a boil and cook for 10 minutes over med- low heat until the plums are very soft.

3Score the fat on the duck breasts. Season the duck with salt and pepper. Place fat side down in hot cast iron pan and let the fat render and get the skin charred. About 5 minutes. Turn the breasts and cook about 5 more minutes. Set aside on a carving board to rest.

4When the plums are very soft, remove the star anise and use a potato masher to mash the plums to make a thicker sauce. Serve the sauce with the duck.
