How To Make duck breast with mangos

1Peel the mangos and slice the fruit away from the pit. Put half the mango slices in a food processor, add the chicken stock and process until smooth. Smash the remaining mango with a fork coarsely.

2Set aside. Add the oil to a pan and season the duck with salt and pepper. Cook the breast skin side down until the fat has rendered from the skin. Turn and cook about 3 more minutes on the other side. Remove to a cutting board to rest.

3Add the mango mixture and remaining ingredients. Cook, stirring constantly, until reduced by half.

4Slice the duck and serve over the mango mixture.
