4duck breasts boneless skinless

1 tspoil
- BERRY SAUCE

juice of one orange

1bay leaf

3 Tbspred currant jelly

5 ozfresh or frozen mixed berries

1 tspbrown sugar

1 Tbspbalsamic vinegar

1 Tbspinstant tapioca
How To Make duck breast with berry sauce

1Season the duck breasts with salt and pepper. Add oil to a pan and place the duck into the pan and cook about 4 minutes then turn the duck and cook 3 more minutes. Sit aside to rest.

2For the sauce. Put the orange juice, bay leaf, redcurrent jelly and frozen or fresh fruit & brown sugar in a pan.

3Bring to a boil. Reduce heat and simmer about 5 minutes. Remove the bay leaf and stir in the vinegar and instant tapioca and cook until thicken.

4Cut the duck and serve over the mixed berry sauce.
