How To Make duck breast with berry sauce and kiwi
-
1Season the duck breast with salt and pepper. Mix the raspberry vinegar, brandy, and honey. Place the duck in the marinade and marinate for 1 hour.
-
2Meanwhile, make the sauce. Keep a few raspberries for garnish. Place the remaining raspberries in a saucepan. Add the wine and sugar. Bring to a boil. Reduce to a simmer and simmer for about 10 minutes. Strain the sauce through a fine mesh strainer pushing the solids to get the most sauce out. Discard the solids. Place back in a saucepan and set aside.
-
3Remove the duck from the marinade and add the marinade to the sauce. Place the duck in a hot pan skin side down and cook over medium heat to render the fat and get the skin crispy for about 10 minutes. Turn the duck and cook another 5 minutes. Remove to a carving board to rest.
-
4Meanwhile, bring the sauce with the added marinade back to a boil. Mix the corn starch and water. Whisk into the sauce until thickened.
-
5Cut the duck and arrange a piece of kiwi in between each slice. Pour the sauce around the duck and garnish with the reserved raspberries.
