1/2 cdry vermouth

1/2 corange juice

1/2 cchicken stock

1 Tbspsherrry vinegar
How To Make duck breast in savory orange sauce

1Score the skin on the duck breast. Season with salt and pepper. Add the olive oil to a cast iron skillet. Get the skillet smoking hot.

2Place the duck breast in the skillet skin side down. Do not move the duck let the fat render from the skin and get really browned for about 7 minutes.

3Mix the vermouth, orange juice, chicken stock, and sherry vinegar.

4Remove the duck from the skillet and set aside. Add the shallot and garlic to the skillet and cook for 30 seconds. Pour in the orange juice mixture and bring to a boil. Reduce heat to a medium and let reduce to about half. Add the duck breast back skin side up and cook for about 4 minutes. Remove the duck to a cutting board and keep reducing the sauce to about 1/2 cup. Strain the sauce and discard the solids.

5Once the duck has rested for about 10 minutes slice and serve with the sauce.
