Ingredients For cornish hens with hoisin lime sauce

  • MARINADE
  • 2 Tbsp
    5 spice powder
  • 1/4 c
    salt
  • 2 c
    Chinese black vinegar
  • 1/2 c
    soy sauce
  • 1/2 c
    dark molasses
  • 1/2 c
    honey
  • 2
    Cornish game hens
  • HOISIN LIME SAUCE
  • 1/4 c
    canola oil, plus more for the pan
  • 1/4 c
    chopped shallots
  • 2 Tbsp
    minced garlic
  • 1/2 c
    hoisin sauce
  • 1/4 c
    fresh lime juice
  • 1/4 c
    candied ginger
  • 1/2 tsp
    white pepper
  • 1/4 tsp
    salt
  • TO SERVE
  • 2
    scallions, chopped
  • cooked rice or noodles

How To Make cornish hens with hoisin lime sauce

    To make the marinade, combine all ingredients in a medium bowl. Season the game hens inside and out with the marinade and let marinate in the fridge overnight.

    Preheat the oven 300 degrees F. Remove the hens from the marinade and place in a baking pan with a rack. Reserve the marinade. Roast for 30 minutes. Meanwhile, make the sauce.

    To make the hoisin lime sauce, add a little oil to a saute pan. Add the shallots and garlic and cook about 2 minutes. Add the remaining ingredients except the oil and cook 4 minutes. Transfer the mixture to a food processor and process while drizzling in the oil. Place the sauce back in a pan big enough for the 2 hens to fit. Add the reserved marinade to the sauce.

    Remove the hens from the oven and nestle them into the sauce. Bring to a simmer and cook, basting with the sauce for 15 more minutes. Serve garnished with scallions. Serve with rice or noodles.
