Ingredients For butter basted crispy skin duck breast

  • 2 Tbsp
    olive oil
  • 2
    duck breast
  • salt & pepper
  • 4 Tbsp
    butter
  • 2 sprig
    rosemary

How To Make butter basted crispy skin duck breast

    Get a cast iron pan hot and add the oil. Dry the duck breast, score the skin & season with salt and pepper. Sear the duck breast skin side down until the fat has rendered out and the skin is crispy
  • 2
    Turn the breast over. Add the butter to the pan with the rosemary sprigs.
  • 3
    Turn the breast over again and baste with the butter for about 3 minutes. Turn the breast skin side up and baste another 3 minutes with the butter.

    Remove the breast from the pan and let it rest 10 minutes. Slice and serve
