You've heard of Zucchini Boats... Well, these are little canoes stuffed with deliciousness..

Ingredients For zucchini canoes

    zuchinnis
  • 1 lb
    turkey, ground
  • 1 sm
    onion, diced
  • 1/2 sm
    green pepper, diced
  • 2 clove
    garlic, smashed
  • 1 Tbsp
    olive oil
  • 1 Tbsp
    red pimentoes, diced
  • 1/2 tsp
    italian seasoning
  • 1 c
    tomato sauce
  • 1/4 c
    white wine
  • 1/2 c
    mozzarella cheese
  • 1/4 c
    goat cheese
  • salt/pepper to taste

How To Make zucchini canoes

    In a saute pan, start by adding olive oil, onions, peppers, garlic combine a few minutes, add in the ground turkey, white wine, Italian seasoning, salt and pepper...cook on med about 10 mins until turkey is cooked....set pan aside to cool a bit.

    cut the ends off the zuchinni's and slice down the middle length wise, scoop out the flesh, chop it up and add to the turkey mix, combine well.

    in a baking dish add the tomato sauce, then add equal parts of the turkey mix to each half of the zuchinni's.

    combine the mozzarella and goat cheese and top each "canoe"...cover and bake at 350 degrees for about 30 minutes...then uncover and broil 5 mins until cheese is nice and brown...YUMMY...enjoy with a side of white rice, pasta or salad.
