A quick, easy and somewhat healthy dinner fix for anytime you need to get dinner on the table quickly and keep 'em happy! Can even be a great appetizer or dip for a party. I use this often and it keeps everyone asking for it over and over. Black olives are a great addition for a dip (or if your family will eat them). I use them off and on depending on if I have them in the house. Great for teens or college kids to make themselves.

We always appreciate a quick and delicious meal. The concept of layering the beans, meat, and cheese and then baking it is genius. Everything comes out hot and the cheese bubbling. Then, place the meat mixture on tortilla chips and layer with your favorite toppings. Serve this family style on a large platter or place in individual bowls and let everyone add their own toppings. This is a fun dinner recipe, but it would also be great for game day.

Ingredients For working mom's layered nachos

  • 2 lb
    ground turkey breast
  • 2 pkg
    taco seasoning mix packets, 1.25 oz each
  • 1/4 c
    water
  • 1 can
    refried beans, vegetarian style canned (Rosarita preferred), 30 oz.
  • 8 oz
    cheese, shredded (sharp cheddar or mexican blend preferred)
  • sour cream (optional)
  • guacamole (optional)
  • tomatoes, diced or salsa
  • tortilla chips, baked
  • black olives (optional)

How To Make working mom's layered nachos

  • Browned turkey with taco seasoning added.

    Brown turkey in a pan. Add taco seasoning and water, then continue cooking until saucy but not too "soupy" (just a couple minutes).
  • Adding a layer of refried beans to a baking dish.

    In a 13x9 glass dish, add a bean layer.
  • Topping the beans with the ground turkey.

    Then top with the ground meat.
  • A layer of turkey sprinkled onto ground turkey.

    Top with cheese.
  • Baking dish covered with aluminum foil.

    Cover with foil.
  • Mixture baked until the cheese is bubbly.

    Bake at 350 degrees for 30 minutes or until cheese is melted and bubbly.
  • Beans, ground turkey, and cheese mixture scooped out of the baking pan.

    Serve with chips, sour cream, guacamole, salsa, and any other garnish desired. Enjoy!!
