I served this recipe the first time to friends. One of them does not like turkey! Well he ate this like it was his last meal and took home leftovers!

Ingredients For turkey thigh pot roast

  • 2
    turkey thighs
  • 1 c
    chicken broth
  • 1 box
    frozen pearl onions
  • 1 sm. pkg
    baby carrots
  • 1 box
    frozen peas

How To Make turkey thigh pot roast

    S & P turkey thighs and brown in skillet with a little olive oil. Put in crock pot. Then add the onions & carrots to same skillet and saute until a little brown. Add to to crockpot with frozen peas. Pour chicken broth over all and cook on high until it simmers. Turn crock pot to low and cook until meat is falling off the bone. Serve over mashed potatoes, noodles or even rice.

    p.s. I thickened this with a slurry of cornstarch & water and let it simmer a little with the lid off the pot.
