turkey taco cups
This recipe came from the September/October 2015 WeightWatchers Magazine. I made some minor modifications and used my homemade taco seasoning (see recipe listed on my page for Taco Seasoning).

Ingredients For turkey taco cups

8(7-inch) flour tortillas

1 lbground turkey

1small onion, chopped

1small red pepper, finely chopped

2 Tbsptaco seasoning (separate recipe)

1 tspchopped canned chipotle in adobo

1 can(15 oz) diced tomatoes

1 can(15 oz) black beans, drained and rinsed

3/4 ccorn (thawed frozen or canned)

1/2 clow-fat mexican cheese blend

2 Tbspchopped cilantro
How To Make turkey taco cups

1Preheat oven to 400 degrees. Lightly coat one side of tortillas with cooking spray; gently pleat and place tortilla sprayed side down, in each of 8 large muffin cups. Bake until crisp, 12-15 minutes; remove and cool.

2Meanwhile, coat a nonstick skillet with cooking spray; set over medium-high heat. Add turkey, onion and pepper; cook, breaking up turkey until turkey is cooked through and onions are soft and translucent, about 8 minutes.

3Add taco seasoning and chipotle; stir to combine. Add tomatoes, beans, and corn; heat through. Spoon 1 cup filling into each tortilla cup; sprinkle with cheese and cilantro and serve.
