This recipe came from the September/October 2015 WeightWatchers Magazine. I made some minor modifications and used my homemade taco seasoning (see recipe listed on my page for Taco Seasoning).

Ingredients For turkey taco cups

  • 8
    (7-inch) flour tortillas
  • 1 lb
    ground turkey
  • 1
    small onion, chopped
  • 1
    small red pepper, finely chopped
  • 2 Tbsp
    taco seasoning (separate recipe)
  • 1 tsp
    chopped canned chipotle in adobo
  • 1 can
    (15 oz) diced tomatoes
  • 1 can
    (15 oz) black beans, drained and rinsed
  • 3/4 c
    corn (thawed frozen or canned)
  • 1/2 c
    low-fat mexican cheese blend
  • 2 Tbsp
    chopped cilantro

How To Make turkey taco cups

    Preheat oven to 400 degrees. Lightly coat one side of tortillas with cooking spray; gently pleat and place tortilla sprayed side down, in each of 8 large muffin cups. Bake until crisp, 12-15 minutes; remove and cool.

    Meanwhile, coat a nonstick skillet with cooking spray; set over medium-high heat. Add turkey, onion and pepper; cook, breaking up turkey until turkey is cooked through and onions are soft and translucent, about 8 minutes.

    Add taco seasoning and chipotle; stir to combine. Add tomatoes, beans, and corn; heat through. Spoon 1 cup filling into each tortilla cup; sprinkle with cheese and cilantro and serve.
