I had all these ingredients on hand, but didn't know what to make so I looked in my recipe box from ages ago and found this. It's healthy, quick and easy to make. You can use sweet or hot sausage.

Ingredients For turkey sausage-veggie soup

  • 4 oz
    wagon wheel pasta
  • 4
    links of turkey sausage, i used sweet sausage
  • 1 md
    onion, chopped
  • 1 md
    zucchini, chopped
  • 1/2 lb
    sliced fresh mushrooms
  • 2
    14.5 oz cans diced tomatoes w/ red pepper
  • 2
    14.5 oz cans lower-sodium chicken broth
  • 1
    15 oz can red kidney beans, drained

How To Make turkey sausage-veggie soup

    Cook pasta as directed and drain. Spray a lg pot w/ cooking spray and place over medium heat. Add sausage. Cook, turning, until browned and cooked through.

    Remove sausages from pot. Add vegetables to pot and cook, stirring until softened. Add tomatoes w/ juice, chicken broth and beans. Bring to a boil.

    Cover. Cook over low heat until heated through. Slice sausages and add to pot. Cook until heated through.
