Ingredients For turkey croquettes

1 cmilk
-
1 cleft over gravy
-
1/4 tspwhite pepper
-
2 tspparsley, italian
-
1 stickbutter
-
1 stickcelery minced
-
1 cflour
-
1 1/2 lbturkey meat chopped very fine( i use my food proscessor for this)

2 lgeggs
-
2 cmilk
-
3 cflour or cracker meal

3 cplain bread crumbs

1 pkgwax paper

1 qtfrying oil
How To Make turkey croquettes

1For the croquette batter,mix the milk,gravy,white pepper and parsley,heat in a heavy bottom pot,stir until smooth. Next: melt the butter,sauté the minced celery until soft,add the 1 cup of flour until smooth. Next: combine the milk and gravy mixture with the butter and flour,celey mixture then fold in the finely chopped turkey.

2Shape into cone shaped servings,not to big. They should be about the size of a golf ball or slightly bigger.Place them on waxed paper until your done and ready to fry them.

3Heat the oil in a heavy skillet and brown them on all sides. Serve with mashed potato and your gravy from Thanksgiving,enjoy!:)
