Ingredients For sweet potato & turkey summer soup w/zucchini raiso

  • 1 lb
    turkey, ground - browned
  • 1 lb
    turkey, roasted
  • 3 stick
    celery stalks, chopped fine
  • 1/2
    sweet onion, chopped fin
  • 32 oz
    chicken broth, low sodium
  • 1 lg
    sweet potato, cut in cubes, bite sized
  • 3
    carrots, sliced
  • 1/3 c
    brown sugar, lightly packed
  • 1 can
    black eyed peas
  • 1 can
    red kidney beans
  • salt, low sodium & pepper to taste

How To Make sweet potato & turkey summer soup w/zucchini raiso

    Brown the ground turkey in large soup pot, once browned, add chopped Onion, Celery, Carrots, 2 Cups of chicken broth (just enough to cover for a simmer), 5 min later, add cubed sweet potato, add 1 cup of chicken broth and cook until soft - about 10 min. Once soft, add browned ground Turkey, roasted Turkey, pulled or diced, brown sugar, remaining chicken broth, black eyed peas (not drained), red kidney beans (not drained), salt & pepper to taste (not much salt is needed as this is a flavorful recipe in it's own right, I always use the lowest sodium salt possible) This is a heart healthy recipe and very tasty!
