When it's too hot and/or I don't want to cook supper, I often make a large salad with whatever fresh raw veggies are in the house and the refrigerator. Toss in some lettuce, radishes, grated carrots, tomatoes, cukes, cheese that is diced and/or some shredded cheese, some black olives, a little onion,leftover meat/poultry or coldcuts sliced, and a favorite dressing (store bought or homemade) and croutons if desired. We love it!

Ingredients For super salad

  • 1 pkg
    mixed greens, or head of romaine lettuce broken into pieces
  • 1 lg
    ripe tomatoe, cut into wedges; or cherry tomatoes;
  • 1/2
    european cuke, sliced and halved,
  • 1
    carrot grated
  • 6
    or more radishes,stem and root removed,sliced
  • 1
    small can of sliced black olives;or mixture of olives
  • 2 or 3
    slices, red onion or vidalia onion chopped
  • 1 c
    chopped left-over roast beef,turkey,chicken or ham;or two kinds.
  • add shredded,sliced or grated cheese over all
  • salad dressing, or homemade oil and vinegar dressing
  • mixed herbs, dried or fresh

How To Make super salad

    Toss this altogether, heap on a plate, grab a napkin, and a tall refreshing cold drink and find a comfortable spot in the shade or near a fan and relax and enjoy your meal.
