This came about when I needed to use up a leftover 1/2 lb. of ground turkey; one carrot, the last egg, and a few other bits 'n bobs left in the fridge the day before grocery shopping day. It actually turned out surprisingly well and it's already been requested a second time. Figured I'd better get in print what I'd done before I forgot. And even though it seems to have a long list of ingredients, it's really simple enough for one of the boys to make by themselves. That's always a plus. If you try it, I do hope you will let me know what you think.

Ingredients For stuffed jumbo shells (ground turkey & sausage)

12 jumbo pasta shells

½ lb. ground turkey

¼ lb. bulk breakfast pork sausage

1 egg
-
¼ cup fine bread or cracker crumbs

about 4 oz. frozen chopped spinach, thawed, water squeezed out, and chopped again

1 small carrot, shredded
-
½ cup grated parmesan cheese, divided
-
¼ tsp. salt
-
½ tsp. garlic powder
-
¾ tsp. onion powder
-
½ tsp. dried basil
-
½ tsp. dried oregano
-
2 cups marinara sauce, homemade or store bought
How To Make stuffed jumbo shells (ground turkey & sausage)

1Grate carrot and chop thawed squeezed dry spinach; set aside. Grate parmesan cheese; set aside.

2In mixing bowl, thoroughly mix everything, except marinara sauce, with ¼ cup parmesan cheese. Cover with plastic wrap and set in fridge for about an hour, to allow flavors to mingle and bread crumbs to hydrate.

3Heat oven to 350º F. Spray 9” square baking dish with cooking spray.

4Cook shells in boiling, salted, water for 10 - 12 minutes. Drain, rinse, just to cool enough so you can handle. Drain.

5Spread about ½ cup of the pasta sauce over bottom of baking dish. Spoon mixture into each pasta shell. Arrange shells, filled sides up, on sauce in baking dish.

6Pour remaining sauce over stuffed shells. Spray a piece of foil with cooking spray; cover shells with foil. Bake 40 minutes.

7Uncover; sprinkle with remaining ¼ cup Parmesan cheese. Bake uncovered 5 to 10 minutes longer.
