I have always loved to cook. This was a dinner I enjoyed making when Uncle Charlie lived with us in Joliet. In fact, I made it so often, the recipe card has soy sauce on it!

Ingredients For stir-fry turkey fajitas

410" flour tortillas

2 Tbspsugar

1/4 csodium-reduced soy sauce

2 Tbsplemon juice

1 Tbspcornstarch
-
1/4 tspcrushed red pepper

1 Tbspolive oil
-
1 mdonion, chopped
-
3 clovegarlic, minced
-
3 mdgreen, red, or yellow sweet peppers, cut into strips

12 ozskinned, boned turkey breasts, cut into thin strips
How To Make stir-fry turkey fajitas

1Wrap tortillas in foil, warm in 300 degree oven. Combine soy sauce, sugar, lemon juice, cornstarch, and crushed pepper. Spray a skillet with PAM. Stir fry onion, sweet peppers and garlic in skillet over med heat 3-4 min. Remove from skillet. Add oil to skillet, stir fry turkey over med-high heat 3-4 min or until no longer pink. Add soy sauce mixture. Cook and stir till bubbly. Add sweet pepper mixture, heat through. Spoon onto tortillas, roll up.

2Note: I doubled the sauce, and used 2 small tortillas each instead of 10 inch tortilla each.
