I love using ground turkey instead of ground beef, but I hate how dry turkey burgers are unless they are "beefed" up. This recipe has evolved in my attempts to make turkey burgers juicy and delicious!

Ingredients For southwest turkey burgers

1/2 cchopped onion

2 clovegarlic chopped
-
1/4 cgreen pepper diced

2 Tbsptomato paste
-
1/2 cwhole kernel corn (frozen)

1/2 ccanned black beans, drained & rinsed
-
2 Tbspolive oil
-
1 lbground turkey
-
1 ccorn tortilla chips, crushed
-
1 tspground cumin
-
1/2 tspcayenne pepper
-
1egg
-
1 tspsalt
-
sliced tomato & avocado
-
4kaiser rolls
- CHIPOTLE MAYO

1/4 ccanned chipotles in adobo sauce, chopped

1 cmayonaise
How To Make southwest turkey burgers

1Combine the chipotles and mayo in a small bowl. Cover and refrigerate until ready to assemble burgers.

2In a saute pan heat oil, then add onions, garlic, and green pepper. Cook until vegetables are tender, 3 to 5 minutes. Add the tomato paste and stir until well blended. Remove pan from heat and add the corn and black beans. Stir carefully

3In a large mixing bowl, combine the turkey, corn chips, and spices. Add the corn and black bean mixture and egg. Mix well.

4Shape mixture into 4 burgers. Grill over medium high heat until cooked through (about 10-15 minutes). Assemble burgers placing one on each roll with the tomato and avocado slices and chipotle mayo.
