I must say that this was our first time trying to smoke a turkey and we were so pleasantly surprised with our results that I had to share. I originally looked for a 10-12 lb turkey but 17lbs was the smallest I found because of the holiday rush. A turkey normally takes 30-40 minutes per pound to cook on a smoker that is kept around 225 deg. so adjust cooking times accordingly. Also, when smoking any meat a pink tint may be from the smoking process and doesn't necessarily mean the meat isn't done.

How To Make smoked turkey

1Thaw turkey; remove giblets and neck.

2Rinse turkey and season generously inside cavity and out. Cut both tangerines in half(I also cut slits in the halves to release the juices but did not squeeze the halves). Place in the cavity.

3Put turkey on a prepared smoker (we used Kingsford Competition Briquettes, piece of oak to smoke with, and drip pan full of water). We placed it breast up and did not move it at all. About every hour we basted the inside and outside with apple cider vinegar.

4The coals lasted appx 5 hours and we decided to finish turkey in the oven. Internal temp was 140 deg off the smoker. We put the turkey breast side down in a 325 deg oven. It took appx 2 hours to get to an internal temp of 175 deg. We took it out and let it rest for appx 30 mins before carving.
