slow cooked healthy kielbasa, sauerkraut & flavor
I love kielbasa and sauerkraut but wanted a healthier version & so decided 1 busy morning to toss it all into the slow cooker. It was all gone by that night, lol..hubby at 3 bowls.

Ingredients For slow cooked healthy kielbasa, sauerkraut & flavor

3 mdyukon potatoes, cut into 1-1/2" pieces

1 tspdried thyme

1/2 tspsalt
-
1 tspblack pepper
-
114 oz pkg turkey kielbasa,cut on the bias , 1-/12" slices
-
1 Tbspcanola oil or vegetable oil
-
1 mdyellow onion, sliced thin
-
1-1/4 clow-sodium chicken broth
-
2 Tbspdijon mustard
-
116 oz jar or bag sauerkraut w/ caraway seeds, do not drain

1 Tbspfresh choped thyme
How To Make slow cooked healthy kielbasa, sauerkraut & flavor

1Spray a 5 quart slow cooker w/ cooking spray. Place potatoes, 1 tsp thyme, salt & pepper in bottom of cooker, toss to coat. Place oil in a large skillet over med-high heat. Add the sliced kielbasa and cook, stirring until lightly browned. Set aside the kielbasa in a bowl.

2To the skillet, add onion & cook, stirring until light brown, about 5 mins. Put onions on top of potatoes in cooker. Add broth to skillet, scraping up any brown bits. Pour into cooker.

3In th bowl w/ set aside kielbasa, add Dijon mustard & toss to coat. Arrange kielbasa on top of onions in cooker. Spread sauerkraut, ( with any added ligiud reserved,) over kielbasa on top. Add reserved liquid. Cover & cook, on low for 4 hrs or until potatoes are tender. Sprinkle w/ 1 tbsp fresh, chopped thyme.
