Another creation that came together with ingredients I already had. Nothing goes to waste at our house if we can help it. First time I cooked Purple Hull Peas and we like them very much. Never heard of them until my friend gave some to us. I will look for them next season. Who would have thought to stuff bell peppers with peas, but it turned out quite delicious! Ingredients For purple hull peas stuffed bell pepper casserole

  • 2 c
    fresh purple hull peas
  • 1 c
    onions red chopped
  • 1 c
    bell pepper green chopped
  • 1/2 c
    mushrooms chopped
  • 1 c
    chicken broth
  • 1 Tbsp
    bacon grease
  • 1 c
    corn on the cob
  • 1 lb
    turkey ground browned
  • 3 md
    bell peppers green - quartered
  • 1 can
    stewed tomatoes mashed
  • 1 c
    rice brown - cooked per instructions
  • 1 pinch
    ground dried jalapeno (optional)
  • 2 sm
    tomatoes halved then sliced
  • 1 Tbsp
    blackberry ginger balsamic vinegar

How To Make purple hull peas stuffed bell pepper casserole

    The first 6-ingredients I placed in pressure cooker. it took 3-minutes to cook peas. I added garlic, S&P, Penzey's Creamy Peppercorn to taste.

    I micro'd 2-ears of corn and took off cob then added to peas; browned a pound of ground turkey in olive oil w/pinch of Penzey's Ground jalapeno, Blackberry Ginger Balsamic Vinegar, a little pepper/salt, then added turkey mixture to the peas.

    Cooked 1-cup brown rice, 2c water, and 2tbls butter - cook per instructions. When done added to the peas with 1-can Stewed Tomatoes + 1/2-cup Catsup. Stuffed in quarter cut Green Bells in square baking dish, poured the rest of mixture over top. Sliced tomatoes on top, peppered generously, salt slightly over tomatoes, and pinch of sugar over tomatoes as well. Baked 350 for 45-minutes.
