I have had this idea in my head since the SSS challenge to use turkey wings and radishes in a sammie. I wrote it all down and then didn't get to make it til now, so here it is. A day late and a dollar short, but definitely not short on taste!!!

Ingredients For pam's big ol' monster buffalo hot wing sammie

  • 1 lg
    turkey wing, or two smaller ones
  • salt and pepper to taste
  • 2 Tbsp
    vegetable oil
  • HOT SAUCE MARINADE
  • 2 Tbsp
    butter or oil
  • 2 to 6 tsp
    hot sauce, your choice (lousiana, tabasco, red hot, habanero, etc)
  • 1/8 tsp
    garlic powder, to taste
  • 2 or 3 pinch
    cayenne pepper, to taste
  • 1/2 tsp
    paprika, hot or mild
  • 1/2 tsp
    worcestershire sauce
  • 1 Tbsp
    white wine vinegar
  • BLUE CHEESE SPREAD- IF YOU CAN'T FIND ROKA CHEESE, SUB 4 OZ OF CREAM CHEESE AND ADD EXTRA BLUE CHEESE CRUMBLES
  • 1 jar
    roka blue cheese from kraft (4 - 6 oz jar)
  • 2 to 4 Tbsp
    mayonnaise
  • 1 to 2 oz
    blue cheese crumbles, i use maytag blue
  • CELERY, RADISH AND CABBAGE SLAW
  • 4 to 5
    celery stalks, finely chopped
  • 4 or 5
    radishes, finely chopped
  • 3/4 c
    small cabbage, shredded fine
  • 2
    hard rolls
  • 3 or 4
    lettuce leaves

    Preheat oven to 300 degrees F. Sprinkle turkey wings all over with oil, salt and pepper, wrap in foil and place in baking pan. Bake until meat is tender when tested with a fork. Time depends on size of turkey wing. Remove from oven when tender and let cool. Strip meat off bones, discard skin and bones. slice meat into long thin strips and place in large zipper bag. Set aside.

    Mix all hot sauce ingredients in a small bowl and heat in microwave for 1 to 1 1/2 minutes. Stir well, adjust hot sauce and seasonings to your taste. Pour over turkey slices in bag, making sure all turkey is coated with sauce. Refrigerate overnight to marinate.

    Mix blue cheese spread ingredients in a small bowl, set aside. (This will be more than you need for two sandwiches) Mix celery, radish, and cabbage slaw in another bowl and add about 2 to 3 Tbsp of the blue cheese spread. Mix well and set aside. (This will be more than you need for two sandwiches)

    Remove turkey from fridge and reheat on a plate in the microwave. Split and toast the hard rolls, spread top and bottom with blue cheese spread. Place about 1/4 c. of slaw on bottom roll, add a few slices of radish if you like. Top each sandwich with some of the turkey, then lettuce and top of bun. (If you like it HOT, just sprinkle a little hot sauce over turkey before adding lettuce.

    Serve with a bit of the slaw, extra celery stalks and a little dab of the blue cheese for dipping (and maybe a nice cold red beer). Enjoy! :)
