I saw the photo of this from the pinched from the internet on the sidebar the other day so I decided to make these my way.. You can use other meats or chicken and sauce as spicey as you like.... This was an easy recipe to prepare. My family enjoyed this recipe very much Give it a try and see if your family likes it... These are my photos...

Ingredients For mini bell pepper nachoes-my way

  • 1 bag
    coloful mini bell peppers cut in half and seeded
  • 1 lb
    ground turkey
  • 1/2 md
    yellow onion, diced small
  • 1 pkg
    (1.5 oz.) enchalada sauce powder
  • 1 c
    tomato juice
  • 1 Tbsp
    worcestershire sauce
  • 1 tsp
    garlic powder with parsley
  • 1 c
    cheese, shredded
  • 8-12
    cherry tomatoes, diced

How To Make mini bell pepper nachoes-my way

    Spray a skillet with oil and place the turkey meat and onion in the hot pan. Stir and scramble them together untilthe meat is no longer pink and the onions are translucent.

    Cut peppers in 1/2 lengthwise and remove seeds. Place close together on a cookie pan covered with foil.

    Heat oven to 350º. When meat is done add the enchalada powder and stir to blend with the meat. Add the seasoning and tomato juice..cook and stir until mixture has thickened.

    Place meat mixture over peppers,bing sure to get meat in each pepper piece..

    Sprinkle on the cheese and then the diced tomatoes.

    Bake in the oven for about 8 mnuites or until the cheese melts..Enjoy! This pepper and cheese mixture is geat rolled up in a flour tortilla , spread with sour cream ,,Mmmm
