I wrote this recipe today wanting something different to do with my leftovers.

We challenge anyone that says they don't like turkey leftovers to try this wonderful shepherd's pie. The filling reminds us of a rich pot pie with all the yummy flavors of a holiday turkey. Using a soup base gives the filling a savory, rich flavor. Mashed potatoes and cheese are the crowning glory of this shepherd's pie. It's a wonderful recipe to use holiday leftovers the whole family will love. Bonus, we love that this is a one-pot meal.

Ingredients For leftover turkey shepherd's pie

  • 1 c
    diced onion
  • 1 c
    diced carrot
  • 1 c
    diced celery
  • 2 Tbsp
    butter
  • 1/4 c
    all-purpose flour
  • 2 c
    chicken broth or more if needed
  • 1 Tbsp
    Better Than Bouillon chicken base
  • 1/2 tsp
    salt
  • 1/2 tsp
    pepper
  • 3 c
    mashed potatoes
  • 2 c
    shredded cheddar cheese
  • 2 c
    chopped turkey
  • 1 c
    corn or green beans

How To Make leftover turkey shepherd's pie

  • Sauteeing onions, carrots, and celery in butter.

    Put 2 Tablespoons of butter in an ovenproof skillet. Saute onions, carrots, and celery.
  • Adding salt and pepper.

    Add salt and pepper.
  • Flour added to tender vegetables.

    After vegetables are tender add flour. Cook 2-3 minutes.
  • Adding chicken broth.

    Add chicken broth stirring to prevent lumps.
  • Adding chicken base.

  • Simmering until everything is thick.

    Let simmer until everything is thickened and bubbly.
  • Stirring in turkey and corn.

    Add diced turkey and corn.
  • Mixture simmering in a pot.

    Let mixture come up to a simmer. Remove from heat.
  • Mashed potatoes spread over the filling.

    Spread mashed potatoes over the top.
  • Cheese sprinkled over the mashed potatoes.

    Top with cheese.
  • Shepherd's pie baking in the oven.

    Bake in a preheated 350* degree oven until heated through and cheese melts.
  • Leftover Turkey Shepherd's Pie on a plate.

    If you don't have any leftover mashed potatoes, make a pie crust and put over the top. Cut slits and bake in a 400* oven until golden brown.
