Wow! These nachos are packed with so much flavor. Not only is this a great way to use leftover turkey, it's delicious. The dressing mix brings this dish to a whole new level of yumminess! During the holidays when everyone is tired of the typical things you make with leftover turkey, give this a try for something new and different.

Ingredients For leftover turkey nachos

3 Tbsplime juice

2 Tbspolive oil
-
1 tspground cumin
-
1 tspgarlic powder

2 ccooked turkey, coarsely chopped

salt & pepper to taste

1 pkg10 ounce large tortilla chips, I used the blue corn organic chips

1 can16 fluid ounces refried beans
-
2 cshredded monterey jack cheese
-
2 csalsa
-
sour cream
-
cilantro, fresh
How To Make leftover turkey nachos

1Heat oven to 425°F. Whisk together lime juice, olive oil, cumin and garlic powder.

2Add turkey to large/medium bowl. Toss mixture with turkey in a small bowl. Season with salt and pepper.

3Make a layer of tortilla chips to cover the bottom of a large 12 to 14-inch round or oval baking dish. (I used a 9 x 13 pyrex baking dish) Evenly spoon refried beans over chips.

4Top with turkey.

5Sprinkle with 1 cup shredded cheese. Make another layer of tortilla chips.

6Spoon half the salsa evenly over chips. Top with remaining cup of cheese.

7Bake nachos 15-20 minutes or until heated through and cheese melts and begins to bubble.

8Serve hot with remaining salsa, sour cream and cilantro, if desired.
