Wow! These nachos are packed with so much flavor. Not only is this a great way to use leftover turkey, it's delicious. The dressing mix brings this dish to a whole new level of yumminess! During the holidays when everyone is tired of the typical things you make with leftover turkey, give this a try for something new and different.

Ingredients For leftover turkey nachos

  • 3 Tbsp
    lime juice
  • 2 Tbsp
    olive oil
  • 1 tsp
    ground cumin
  • 1 tsp
    garlic powder
  • 2 c
    cooked turkey, coarsely chopped
  • salt & pepper to taste
  • 1 pkg
    10 ounce large tortilla chips, I used the blue corn organic chips
  • 1 can
    16 fluid ounces refried beans
  • 2 c
    shredded monterey jack cheese
  • 2 c
    salsa
  • sour cream
  • cilantro, fresh

How To Make leftover turkey nachos

    Heat oven to 425°F. Whisk together lime juice, olive oil, cumin and garlic powder.

    Add turkey to large/medium bowl. Toss mixture with turkey in a small bowl. Season with salt and pepper.

    Make a layer of tortilla chips to cover the bottom of a large 12 to 14-inch round or oval baking dish. (I used a 9 x 13 pyrex baking dish) Evenly spoon refried beans over chips.

    Top with turkey.

    Sprinkle with 1 cup shredded cheese. Make another layer of tortilla chips.

    Spoon half the salsa evenly over chips. Top with remaining cup of cheese.

    Bake nachos 15-20 minutes or until heated through and cheese melts and begins to bubble.

    Serve hot with remaining salsa, sour cream and cilantro, if desired.
