home made turkey meat loaf

I couldn't find any ground turkey at the super market, so bought two pounds of turkey tenderloins and ground it myself in my food processor. The trick is not to over process, it only takes a few seconds to grind it up. I divided mine in 3 batches so they would process faster.

- FOR THE MEATLOAF

2 lbground turkey tenderloin

3/4 cuncooked old fashioned oat meal

1/4 cminced dried onions

1/2 corganic ketchup

1 tspworcestershire sauce

1 tspdried oregano
-
4 lgfresh basil leaves, chopped

1 Tbspbetter than bouillon turkey base

4slices turkey bacon, chopped

1/4 cgoat milk
-
2 lgorganic eggs
-
1 Tbspprepared horseradish

1/4 tspsea salt
-
1/2 tspfresh ground pepper
- FOR THE TOPPING

1/2 corganic ketchup
-
1 Tbspprepared horseradish

3 Tbspbrown sugar

2 tspspicy mustard
How To Make home made turkey meat loaf

1Preheat you oven to 375'F. You will need a 9x5 inch loaf pan.

2If you choose to ground up your own meat buy 2 lbs of turkey tenderloin and grind it up. That's what I did. I added the turkey bacon, Worcestershire sauce, oregano, basil and turkey base in with the turkey as it was grinding up. If you buy the meat already ground up, I suggest you grind the turkey bacon up so it isn't in big chunks.

3Put your meat in a bowl and add all the other ingredients for the meat loaf.

4Place the ground meat mixture in your loaf pan and form it into a loaf and bake it for 1 hour. Then remove from the oven and add the topping spreading evenly on the top. Pop it back into the oven for the last 15 minutes to set the topping.

5Serve warm or cold, it's great on sandwiches too.
