Mexican food is a family favorite so I'm always trying to come up with new Tex-Mex ideas. Just using what I had on hand resulted in this casserole. It was super simple to make and everybody loved it.

Ingredients For fiesta corn casserole

1 lbturkey breakfast sausage, browned
-
1 1/2 celbow macaroni, uncooked

1 can(15.25 oz) fiesta corn, undrained

1onion, (optional)
-
1 can(14.5 oz) petite diced tomatoes, undrained
-
2 csalsa
-
2 cwhite tortilla chips, crushed
-
2 ccheese, cheddar and pepper jack
How To Make fiesta corn casserole

1After browning turkey sausage, drain any excess grease if necessary. In a 13"x9" casserole dish, layer ingredients beginning with uncooked elbow noodles. Next add sausage, then corn and onion.

2Stir together tomatoes and salsa. Pour over other ingredients in the pan.

3Cover and bake at 350 degrees for 50 minutes.

4Remove from oven. Uncover and sprinkle tortilla chips over casserole. Cover chips with cheese. Return to oven and bake uncovered for an additional 5 to 10 minutes.

5Note: A four cheese mexican blend would be good in this casserole also.
