christy's turkey meatloaf
I like to serve my meatloaf with Goat Cheese mashed potatoes.... I use a 5 pound bag of red potatoes, cut in a large pot. Boil about 30 minutes or fork tender. While they are boiling in my mixer I add 1 stick of butter, 1 large handful of fresh chives (and dill diced if I have it on hand) and bacon bits. I whip these ingredients together first. Add the hot potatoes and this will melt into them. I reserve 1 cup of the potato water to add instead of milk. I also like to do roasted asparagus... for that I take one large bunch of asparagus and cut off the ends. Drizzle with olive oil and lemon sea salt and pepper and put in the oven with the meatloaf for last 15 minutes of cooking they are amazing!! When they come out I put them on a platter and put some fresh Parmesan cheese on top, my boys especially gobble this up. I make mac and cheese for the boys as well sometimes.

How To Make christy's turkey meatloaf

1Preheat oven to 325 degrees F. Sweat the onions in the olive oil, salt, pepper approximately 15 minutes. Add the Worcestershire sauce, chicken stock, wne and brown sugar and mix well. Reduce liquid by half, about 15 to 20 minutes. Allow to cool. When cooled add the chopped herbs, this will help in keeping them green as long as possible. Combine the ground turkey, bread crumbs, Parmesan cheese, eggs, and onion mixture in a large bowl. Mix well and shape into a rectangular loaf on an ungreased sheet pan. Spread the ketchup evenly on top. Bake for 45 minutes covered and the last 45 uncovered (total 90 minutes or until the internal temperature is 160 degrees F).
