HAD ALL THE INGREDIENTS FOR TACOS BUT WAS IN THE MOOD FOR ALL TO B IN ONE DISH. I HAD REFRIED BEANS N WANTED THIS TO B FILLING....JUST THE RIGHT AMT OF HEAT TOP OFF WITH SOUR CREAM AND/OR SALSA N ...... ENJOY :)

Ingredients For burrito casserole

  • 1 1/2 lb
    chopped turkey (or chpd meat)
  • 1 md
    onion, chopped
  • 2 clove
    garlic, minced
  • 1 can
    spicy tomato sauce (i used rotel)sml.can
  • 1 can
    chopped tomatoes w/chilies (i used rotel) 10 oz
  • 1 can
    refried beans
  • 1 can
    chopped chilies 4 oz
  • 1 can
    black beans, drained 15 oz
  • 1/8 c
    taco seasoning - your own or package
  • 1 pkg
    flour tortillas
  • 1 pkg
    shredded cheddar cheese or mexican blend
  • 1/2 c
    sliced black olives

How To Make burrito casserole

    IN LARGE PAN COOK TURKEY MEAT FOR 5 MINUTES THEN ADD ONION N GARLIC N COOK FOR 5 MIN. ADD TACO SEASONN N MIX. ADD OLIVES, CHPD CHILES, CHPD TOMATOES W/CHILES, SPICY TOMATO SAUCE, REFRIED BEANS AND BLACK BEANS.

    MIX THOROUGHLY N SIMMER FOR 20 MINUTES.

    PREHEAT OVEN TO 350. PUT A THIN LAYER OF MEAT MIXTURE ON BOTTOM OF A 9X13 BAKING DISH LAYER OVERLAPPING TORTILLAS (U CAN CUT TO MAKE IT FIT) MAYB DOUBLE TORTILLAS FOR A MORE FILLING MEAL... THEN PUT A LAYER OF MEAT N THEN CHEDDAR CHEESE...LAYER AGAIN ENDING WITH CHEESE.

    BAKE FOR 30 MINUTES UNTIL CHEESE IS SLIGHTLY BROWN N BUBBLY.
