I have been making this chilli for a long time. It's a favorite amongst my friends and family. I have won contests at work for this chilli too! You HAVE to try it. It's SO easy and SO delish and healthy too!!

Ingredients For bren's vegan crock pot chilli (non-vegan turkey chilli and stove top versions as well)

  • 2 can
    organic diced tomatoes
  • 1 can
    organic light red kidney beans
  • 1 can
    organic dark red kidney beans
  • 1 can
    organic black beans
  • 1 can
    organic tomato past
  • 1 md
    yellow onion
  • 1 bottle
    beer of choice (my favorites in this chilli is yuengling, and heineken but i have used bud light lime as well and it was good too)
  • 1 pkg
    mccormic taco seasoning (not chilli seasoning)
  • 1
    handful of freshly chopped parsley (or 2 tablespoons of dried parsley)
  • 2 Tbsp
    red pepper flakes
  • 1/2 tsp
    ground black pepper
  • 1/2 tsp
    ground cinnamon
  • 2 pinch
    ground nutmeg
  • 2 pinch
    ground cloves
  • 2 pinch
    ground ginger
  • 1 Tbsp
    extra virgin olive oil
  • 1 pkg
    shredded mexican style cheese (optional)
  • 1 c
    sour cream (optional)
  • 1
    bag of tostitoes scoops chips (optional)
  • 1 pkg
    jenny-o lean ground turkey (optional)

How To Make bren's vegan crock pot chilli (non-vegan turkey chilli and stove top versions as well)

    Drain and rinse all beans then place them in the crock pot. Chop the onion into chunks and add to the crock pot. Finely chop the parsley and add it to the crock pot. Add the cans of diced tomatoes (do not drain), and all of the remaining ingredients. Cover and cook on low heat for 6-8 hours or high heat for 3-4 hours. Garnish with a little fresh parsley, fresh chopped onions, and serve with a dallop of sour cream and shredded cheddar cheese on the side! YUM. My family and friends love this because it is thick and chunky and they love to scoop it up on the Tostitoes Scoops chips.

    For a non-vegan alternative use 1 package of Jenny-O lean ground turkey. To do this use only 1/2 the packet of McCormic seasoning in the crock pot and reserve the other half for browning the turkey in a pan. Sprinkle the seasoning on the turkey meat then on medium heat drizzle the olive oil in a pan and brown the turkey only 1/2 way. DO NOT fully cook it. Add the partially cooked ground turkey to the crock pot and cook per above instructions.

    To cook on a stove top use a large stock or stewing pot, covered on low heat for 3 to 4 hours, stirring occasionally.
