Simple but tasty stuffed Poblano pepper

Ingredients For stuffed poblano peppers

  • 2
    poblano peppers
  • 1/4 lb
    hamburg
  • 1 pkg
    mexican blend shredded cheese
  • 2
    egg

How To Make stuffed poblano peppers

  • 1
    Fry hamburg, breaking up into small pieces until browned. Pour off grease and discard.

    Mix in shredded cheese and 1 egg beaten
  • 3
    cut the peppers in half length wise, cut out seeds and membrane.
  • 4
    In a 9x9 baking dish lay the peppers out cavity side up and fill with meat/cheese. Beat the second egg along with a table spoon of four and pour over peppers. Bake at 350'F for 40 minutes. Cover with foil if mixture begins to brown.
