Ingredients For red pepper, black bean & goat cheese quesadillas

1 jarroasted red bell peppers - equivalen of 2 peppers

2 lggarlic cloves, pressed

2 ozgoat cheese, crumbled (1/2 cup)

3/4 cnonfat cottage cheese
-
salt & pepper
-
2 can15-oz. cans black beans, drain after heating them

8corn tortillas (or flour if you prefer)

1 csalsa
How To Make red pepper, black bean & goat cheese quesadillas

1In a food processor, chop the garlic and then add the roasted peppers - process to a coarse puree consistency.

2Add the goat cheese and cottage cheese and blend until smooth. Season with the salt and pepper.

3Meanwhile, heat the black beans over medium heat until hot.

4Heat 2 tortillas in a dry skillet until pliable. Spread 2 tbsp. of the mixture over each tortilla; ;leaving a half-inch border. Fold tortilla over and heat through.
