Since moving to the East Coast, I have discovered seafood tacos. I have been experimenting with the different seafood that comes my way. I hope you will enjoy this tasty treat that's perfect to serve to family or friends.

Ingredients For my new favorite taco - lobster paradise

  • 4
    small, soft, corn taco
  • 1/2 - 1
    avocado, thinly sliced
  • 1/8
    small, sweet, white onion or 1 green onion
  • 1/2
    mango, thinly sliced
  • 1/2
    thinly sliced red chili
  • 2
    lobsters - meat (tail, claws, joints) cut into bite size pieces
  • 4 Tbsp
    coleslaw
  • 1 pinch
    sea salt
  • SRIRACHA SAUCE
  • 2 Tbsp
    mayo or miracle whip
  • 2 Tbsp
    thick, sour cream
  • 1 - 2 tsp
    sriracha
  • 4 tsp
    thinly sliced, cilantro garnish (optional)

How To Make my new favorite taco - lobster paradise

    Place tacos in tin foil and bake in 350 oven for 10 minutes.

    While tacos are heating, cut up the avocado, onion, mango, chilies and lobster meat, set aside until needed.

    In a small bowl, mix the mayo, sour cream and sriracha together, if its not strong enough add more sriracha and set aside until needed.

    Assembly: On top of the corn taco add the avocado slices, then the sweet onion. Next add the mango slices and red chillie. Now add the lobster, then the coleslaw, sprinkle with a pinch of sea salt and top with the sriracha mixture. Garnish with cilantro and Enjoy!
