We frequent a Mexican restaurant here in Pasadena that serves the BEST tostadas! They come with a salad dressing and lot's of lettuce,almost like a salad.When I ate meat,I always ordered the chicken tostadas,now I order the bean or shrimp tostadas.I'm sure the other food is tasty but I've never tried anything else on the menu. The is my version of their tostada and cider dressing.So tasty! You can omit the beef and add cooked,small shrimp scampi as well! The cider dressing makes a nice salad dressing as well.

Ingredients For lea's bean tostadas with cider dressing

  • corn tortillas,fried or baked until crispy
  • black or pito beans,canned or homemade
  • ground beef,cooked and well seasoned with salt,pepper,onions,garlic
  • cheese,shredded
  • romaine lettuce,chopped
  • green onions,minced.optional
  • avocados,sliced
  • sour cream, fat-free
  • CIDER DRESSING
  • 1 c canola oil
  • 1 c apple cider vinegar
  • 2 tablespoons honey
  • 2 heaping teaspoons heaping garlic powder
  • 2 tablespoons water
  • pinch of pepper
  • 1/2 teaspoon salt

How To Make lea's bean tostadas with cider dressing

    Spread hot beans on warmed tortillas,add beef,cheese,lettuce.dressing tomatoes,green onion and sour cream.

    Cider Dressing: Add all ingredients in blender and blend until well blended,about 30 secs.
