healthy and delicious fish tacos

- THE FISH

1/2 lbwhite fish, any variety you like

1 ccornflake crumbs

1 tsplemon pepper
-
1/2 tspsalt
-
1/8 tspground pepper

1/2 call purpose flour
-
2egg whites
-
1/4 cskim milk
-
8flour tortillas (preferably high fiber or whole wheat)

1-2 cshredded cabbage or cole slaw mix
-
1/2 csliced green onion
-
fresh, chopped cilantro
-
diced tomato
-
plain, nonfat greek yogurt or sour cream
-
fresh salsa
How To Make healthy and delicious fish tacos

1Preheat oven to 450 degrees. Place a baking rack over a foil lined baking sheet and spray with a non-stick cooking spray.

2Cut fish into bite sized pieces.

3Add flower to a shallow dish.

4In a second shallow dish, combine cornflake crumbs, lemon pepper, 1/2 tsp. salt, 1/8 tsp. black pepper.

5Beat egg whites and milk in a third shallow bowl.

6Coat pieces of fish on all sides in flour, shaking off any excess.

7Dip in coated fish pieces into egg mixture then roll into crumbs, coating well.

8Place coated fish on prepared baking rack. Bake in a preheated 450º oven for 8 minutes or until fish is crisp and cooked through.

9In the mean time, Spray a nonstick skillet with cooking spray and lightly cook tortillas until slightly browned. Keep warm.

10To make tacos, add fish to tortillas and top with favorite toppings such as the one's suggested in the ingredients list.
