easy enchiladas
This is a quick put together meal that does not taste like fast food. I usually serve with sour cream, but it is not necessary.

Ingredients For easy enchiladas

12small corn tortillas

2cooked chicken breast - shredded

1-2 canhatch brand enchilada sauce

1 pkgmixed mexican cheese - shredded
How To Make easy enchiladas

1Chicken can be poached, baked or rotisserie. Heat chicken in a small amount of enchilada sauce

2Put a layer of sauce in bottom of 9" x 11" glass pan. Heat tortillas in a dry pan before filling. Place 1-2 Tbs chicken on tortilla, roll, and place seam side down in glass pan.

3Cover tortillas with additional sauce. Spread Mexican blend cheese over the top. Bake at 350° for about 20 minutes.
