Beef, finely chopped or grated vegetables and a tin of pinto beans cooked in taco seasoning, leave children (and adults) feeling full, while getting a good dose of vegetables. As a mum of 4, I'm aware that getting vegetables into children can be an issue. This is a recipe I've been making for over 13 years. Serve in either soft tortillas or hard taco shells. I normally make both so the kids can choose or have a couple of each.

Ingredients For betty's beef, bean and veggie tacos

  • 1/2 pound (250g) minced beef
  • 1 onion, finely chopped
  • 1 teaspoon minced garlic
  • 1/2 pepper (capsicum) finely diced
  • 1 carrot, grated
  • 1/2 cup frozen corn
  • 1 sachet taco seasoning or 2 tablespoons of home made taco seasoning
  • 1 tin pinto beans (black or kidney beans will also work well)
  • TACO FIXINGS:
  • diced tomatoes
  • thinly shredded lettuce
  • grated cheese
  • sour cream
  • guacamole
  • taco sauce
  • taco shells - hard or soft tortillas. my kids enjoy a mix of both

How To Make betty's beef, bean and veggie tacos

    Firstly, chop and grate all your vegetables.

    Heat a large pan/skillet and brown the minced beef with the onion, garlic, pepper (capsicum) and carrot. Use a little oil of your pan isn't non stick. Use a wooden spoon to break up the mince so that it's not in clumps. Add in the taco seasoning, with 1/2 cup of water. Reduce the heat and simmer for 10 minutes.

    Meanwhile, get all your "taco fixings" ready and set your table. If using hard taco shells, now is the time to heat those in the oven (as per the instructions on the pack).

    Once the meat is done and the liquid evaporated. Drain and rinse the beans, add the meat along with the corn. Simmer for about 60-90 seconds until all is hot and heated through.

    Pour the meat mixture into a bowl along with all the "fixings" and enjoy your meal.
