When I was growing up, our family church was 25 miles away and there were no freeways. So we were gone a long time from home. Sometimes, on the way home, dad would pull into a small Mexican food place. I would always get taquitos, which were filled with a shredded beef and topped with a delicious green sauce. I used to make them, but hated the frying. Fortunately, air frying works really well, This is a great way to use up leftover meats.

Ingredients For air fryer taquitos

8 ozseasoned meat (cooked), see note

8corn tortillas (6 inch)

1/2 cmexican blend shredded cheese

neutral oil in sprayer

salsa
How To Make air fryer taquitos

1Note: Shredded beef or chicken, taco meat, pastor all are good choices. If you are using leftovers, make sure they are seasoned with some taco seasoning or a similar mix. Whatever you use should be finely shredded or in small pieces.

2Warm tortillas in the microwave. Wrap them in a damp paper towel or spray very lightly with oil, heat in a stack for about 1 minute.

3Divide the meat and the shredded cheese among the tortillas, placing them about 1/3rd of the way from an edge. Do not use too much filling, they won't roll up tightly enough.

4Roll into a tight cylinder. Place on a plate and preheat air fryer to 400 degrees F.

5Spray the basket, then transfer each taquito from the plate to the basket, seam side down. Place in a single layer, working in batches if necessary.

6Spray lightly with oil, and bake for about 7 minutes. I do not find that they need to be turned.

7Note: You can use any cheese you like, pepper jack is also a good choice, so it queso quesadilla.

8Serve with your favorite salsa.
