4 (8-oz)center-cut pork chops

1 1/2 tspcajun seasoning (or creole seasoning)

3 Tbspflour

1/2 cupplain yellow cornmeal

1 Tbspunsalted butter

2 Tbspolive oil

1 mdlemon, quarter (for garnish, optional)

4 sprigfresh parsley, for garnish (optional)
How To Make cajun style pork chops

1Sprinkle the pork chops with 1 tsp of the Cajun seasoning; set aside.

2Combine remaining 1/2 tsp Cajun seasoning with the flour and cornmeal, and mix well. Coat both sides of pork chops with the seasoned flour mixture, shaking off excess.

3Heat butter and oil together in a large skillet over medium heat. Add seasoned pork chops, and saute for 7 to 10 minutes each side (thicker chops will require longer cooking time).

4To serve, arrange pork chops on 4 individual dinner plates. Squeeze lemon over each serving. Garnish each with a lemon wedge and parsley, and serve immediately.
