Ingredients For basque lamb chops with tomatoes and olives

6lamb rib chops

salt and pepper, to taste

1/2 call-purpose flour

2 Tbspolive oil

1/3 cdry white wine

1 lbfirm, ripe tomatoes, peeled, seeded and chopped

1/2 cSpanish olives, pitted and sliced
How To Make basque lamb chops with tomatoes and olives

1Season chops with salt and pepper; dredge with flour.

2Heat oil in heavy skillet over medium-high until it starts to shimmer.

3Add chops and cook 2 - 5 minutes on each side. Transfer to heated platter.

4Pour wine into skillet and scrape up brown bits. Stir in tomatoes and olives. Cook over medium heat for 4 - 5 minutes. Season with salt and pepper.

5Spoon sauce over chops and serve.
