Ingredients For ~ shrimpilicious shrimp cakes ~ my way

  • 1 lb
    large shrimp, shelled and deveined ( chop roughly )
  • 4 Tbsp
    mayonnaise
  • 1/2 c
    green onions, chopped
  • 1 Tbsp
    each- lemon juice & dijon mustard
  • 1/2 tsp
    worcestershire sauce
  • 1/2 c
    ritz crackers, finely crumbed
  • 1/4 tsp
    old bay seasoning
  • 1/2 Tbsp
    chopped parsley
  • 1/4 tsp
    dried dill
  • 1
    egg yolk
  • BREADING
  • 1 1/2 c
    toasted panko crumbs
  • 1 tsp
    old bay seasoning
  • Oil
    and butter for frying

How To Make ~ shrimpilicious shrimp cakes ~ my way

    Chop shrimp after cleaning. In a medium bowl, stir together the shrimp, mayonnaise, dill, parsley, onion,mustard, lemon juice, Worcestershire sauce, old bay seasoning, egg yolk and crackers. Mix well and chill for easier handling. Place panko crumbs with old bay seasoning in a bowl, toss. To my iron skillet I added two tablespoonful of each - oil and butter. Over medium high heat, once butter is melted. Dip each shrimp patty into seasoned crumbs, pressing so they stick well. Place in skillet and fry for 4 minutes or until golden, then continue on the other side. Serve alone, in a sandwich or as appetizer with your favorite seafood sauce.
