shrimp with roasted red peppers
Shrimp goes well with so many things - this version uses roasted red peppers. Blanched broccoli or pea pods would be a tasty addition. If using pre-cooked shrimp, add at the very end, just so they're heated and not rubbery.

Ingredients For shrimp with roasted red peppers

1/2 lbraw shrimp, peeled and deveined

1 Tbspolive oil or grapeseed oil

1/2 mdonion, minced

2 clovegarlic, minced
-
1 pinchred pepper flakes, or to taste

6 ozroasted red pepper
-
1/4 cdry white wine
-
1/4 chalf and half
-
2 Tbspsnipped fresh basil (use 2 teaspoons if dried)

1/3 cshredded parmesan cheese
-
1 cbrown rice, cooked

salt and pepper, to taste

chives or green onion tops, chopped, for garnish
How To Make shrimp with roasted red peppers

1Thaw shrimp if frozen, then rinse and pat dry with paper towels. Set aside.

2In a large skillet, heat oil over medium-high heat. Add onion. Cook and stir for 1 to 2 minutes or just until onion is tender, add garlic and cook for 1 more minute. Add shrimp and crushed red pepper; cook and stir for 2 minutes. Add roasted peppers and wine.

3Bring to boiling; reduce heat. Simmer, uncovered, about 2 minutes or until shrimp are opaque, stirring occasionally. Stir in cream. heat, but not to boiling; reduce heat and simmer gently, uncovered, for 1 minute. Stir in basil, add salt and pepper, to taste.

4Serve shrimp mixture and cheese over hot cooked rice. Garnish with chives.
