This is what I had in the house so I made a recipe out of it and it was really good.

Ingredients For shrimp udon
-
2 Tbsppeanut oil
-
2 tspfresh ginger root, minced
-
2 clovegarlic, minced
-
1 lbraw shrimp, peeled and deveined
-
8 ozdry udon noodles (i use a half a pack of wei-chuan organic japanese udon)
-
1/2red bell pepper, sliced into thin strips
-
1 smcarrot, peeled and cut into match-sticks
-
3green onions, cut into 1-1 1/2 inch pieces
- SAUCE
-
1/4 csoy sauce
-
2 Tbspsweet chili sauce
-
1 Tbspbrown sugar (well packed)

2 tspdark sesame oil
- GARNISH
-
thinly sliced green onions
How To Make shrimp udon
-
1Cook Udon according to package directions and rinse under cold water. Set aside

2Heat 2 Tbsp. peanut oil in wok over medium high heat.

3When oil is heated, add shrimp and cook until it just turns pink.
-
4Add ginger, garlic and vegetables and stir fry two minutes longer.
-
5Add cold udon noodles and sauce.
-
6Toss until heated through.

7Plate and serve with a sprinkling of sliced green onion!
